Silence of the Yams

Despite the weekend, I’m still pooped from last week, so as a preventive measure I decided to prep as much as I could for all of this week’s meals ahead of time.  Y’all know how much I like to re-purpose old food, and I had a lone sweet potato and some funky-looking bananas (plus the cold weather gives me a baking itch), so I whipped up a big batch of muffins to take in for breakfast.  These are naturally sweet, moist, and very nutritious.

Banana-Yam Muffins

2 c. Almond Flour
2 Mashed Bananas
1/2 Large Sweet Potato, grated
1 T Coconut Oil
1 T Honey
1 c Fresh Cranberries, chopped
2 Eggs
1/2 t Salt
1/2 t Baking Soda
1 t Cinnamon

Combine all ingredients until well blended.  Bake at 350 degrees for 30 minutes.  Makes 9 large or 12 medium-sized muffins.

Awesome yoga session this morning–today’s practice was a devotion to Ganesh with the intention to find perfection in our imperfections (which is why Ganesh is always holding a broken tusk…see, I learned something!).  This meant a lot of intentionally difficult flows that were supposed to show us that no matter how experienced we were, we were still imperfect in some way.  I’m imperfect in a lot of ways…

Did a little Christmas shopping and managed to buy one gift…that’s an accomplishment for me!  When I got home I prepped our meals for tomorrow.  Leftover quiche for breakfast (between today and tomorrow, we’ll have gone through the whole thing) and chicken-avocado salads with cherries for lunch.  Dinner is going to be a baked salmon.  The Man needs his brain food this week!  GMAT on Friday…I might be more nervous than he is.
