While simultaneously trying to clear out my food stores and come up with some festive baking projects, I threw these muffins together to bring in for breakfast. The best part? CHOCOLATE.
Pumpkin-Chocolate Chip Muffins
2 c Almond Flour
1/4 c Flax Meal
2 t Cinnamon
1 t Baking Soda
1 t Baking Powder
2 Bananas, mashed
1 c Pumpkin puree
1/2 large Sweet Potato, grated
1 t Vanilla
1 c Dark Chocolate Chips (I used 75% cacao)
Combine all ingredients well. Spoon into lined muffin cups and bake at 350 degrees for 35 minutes.
These made the best breakfast for a nasty cold Monday morning back at the office when nobody else is here…about 99.999% of the Army is already on Christmas leave and I’m still here for another week all by my lonesome. *Sigh*
You could certainly try these with 2 cups of pumpkin and without the bananas, but I find that keeping a couple of really ripe bananas in the mix keeps grain-free baked goods really moist and adds a wonderful hint of sweetness. I wasn’t originally going to add the sweet potato but I’m so glad I did–I had a half leftover from last week’s banana-yam muffins and it gave them a wonderful nutty texture and an earthiness that paired really well with the chocolate and cinnamon flavors. SO GOOD…I’ll be making a big batch of these before we leave so we have something tasty to snack on while we drive.

I’m always looking for new Paleo foodie type resources, so I was thrilled when a blog I hadn’t already heard of was featured on Chris Kresser’s list of the best Paleo recipe sites. These South Carolina Crossfit coaches are also authors to over 100 incredible recipes (many Southern-inspired, like their stuffing hushpuppies and…*drool*…fried chicken skins). They’ve also got one of the best info-graphics I’ve ever seen…the Health-Bent Umbrella.
I also did a little research on some new Crossfit gyms…trust me, I love Defiant but we might be re-locating soon (oh, Army, you love to shake things up as soon as I get comfortable), so I was scouting out some potential candidates. The nice thing about any military post is that there are usually a few options to choose from nearby, or at least a good facility on post that offers Crossfit classes.
I’m only working till noon today (yay for holiday half-days!), so this afternoon I’m heading home to finish up the first wave of wedding invites (I divided them into family/bridal party and friends to make it more manageable). Tonight we’ve got “Daniel” laying in wait to kick our asses…if I haven’t been reduced to a pile of steamy lactic jell-o, I’ll let you know how it went.
