Spicy Chorizo Burgers

I saw a recipe over at the Civilized Caveman for a really delicious-looking Apple Dijon Burger and it was the first one I wanted to make and submit for his photo contest.  After a once-over of the fridge, though, I realized we had a ton of beef chorizo left over from an attempt at Juli’s Mexican Hash Egg Bake–I think got distracted or something and just forgot…I feel pretty bad about it, actually, because it looks foodgasmic.

So, anyhow…confronted with a surplus of chorizo with burgers on the brain, I just made some burgers…with chorizo!  Betcha didn’t see that one coming, huh?

Ingredients

(Serves 4-6)

1 lb Beef Chorizo

1 lb Ground Beef

1 Egg

1/2 Small Onion, diced fine

1 Clove Garlic, minced

1/2 t Sea Salt

1/2 t Black Pepper

1/2 t Cumin

4-6 Eggs, for garnish

Directions

Combine all ingredients in a large bowl…make sure you mush it all up real good, now…saving the last 4-6 eggs for later.  Form into patties and cook in olive oil over medium-high heat for about 3-4 minutes on each side or until desired done-ness.  Remove and cover with foil.

Fry the eggs sunny-side up in the beef drippings…make sure the yolks are nice and runny!

Serve the burgers over mixed greens, topped with fried eggs, salsa, guac, and any other desired fixin’s.
