Light and Fluffy Grain-Free Pancakes

Wow, that’s a mouthful.   Of pancakes, no less!

This is a riff on the plantain pancake recipe I’ve been obsessed with lately.  Bananas that are too ripe will work as well, but I prefer the green bananas because the flavor is a bit less banana-y on those day when I want plain pancakes to dress up how I choose.  It’s also less “nutty” tasting than the plantain version and, well, it’s SO much easier to peel a banana than a plantain.

I SWEAR I’m not just blowing smoke up your ass–they’re unbelievable light and fluffy for a Paleo pancake.  No, really…they’re ACTUALLY light and fluffy, not to mention they cook very quickly and flip easily.  What’s more, there’s no bizarre or hard to find ingredients…I’m fairly positive you have all the ingredients in your kitchen right now.  Go ahead and check.  I can wait…

Please please please believe me when I say this is my new favorite pancake.  If not, well…doesn’t change the fact that I’ve had em twice a day the last couple days and probably will for…a while.

INGREDIENTS

1 1/2 Green Banana

1 T Coconut Oil (any oil or nut butter will work in a pinch)

1 Eggs

1 Egg White

1/4 t Vanilla

1/4 t Cinnamon

INSTRUCTIONS

In a food processor or blender, puree all ingredients.  Pour onto a skillet over medium heat.  Cook for about 1-2 mins per side, then flip.  Smear with butter!

Serves 1

    I’m curious, can ripe bananas be used? Finding green ones in the store is strangely challenging for me.
